Instant hot chocolate cereal!? I think the only thing that is better than that is that my T1D daughter loves this! AND paired with turkey bacon or my homemade sausages, we get that desirable, nice and straight blood glucose line on her monitor.

Cacao Dream of Wheat
- 2 cups coconut flakes
- 3/4 to 1 cup monk sweet plus granules
- 1/2 – 3/4 cup cacao nibs
- 1/2 cup collagen
- 1/2 cup oat fiber
- 1/4 cup psyllium flakes
- 3/8 cup chia seeds
- 1 Tablespoon gluccomannan
- 1 teaspoon real salt
Put all ingredients into blender. Pulse until you have a fine grainy consistency… but, not powder.
Store in dry covered container.
Bring water to a boil in a pot or a teakettle. Scoop 1/2 cup dry mix into bowl. Cover with 1/2 – 3/4 cup boiling water. Stir. Let sit about 5 minutes.
Serve with almond, coconut or hemp milk. May also drizzle with cream.
Suggested side: Bacon or sausage and/or berries.
