These were born out of necessity… after not being able to get the sugar free, nitrate free bacon I like to use for my daughter’s breakfast. There is very little she can handle for breakfast without a spike. So… I got some hamburger on sale. However, she didn’t ‘want’ hamburger for breakfast. She, and the other kids did love these sausage patties, though! We paired it with a bowl of my hot cacao dream of wheat to fill the little bellies up. (And I had the same thing.)
If following Trim Healthy Mama, this would be an S.
I made these with beef, but, I’d like to try turkey and deer meat, too, when we have it again! 🙂
Breakfast Sausage Patties
- 2 pounds ground meat
- 2 stalks celery, cut in slices
- 1/2 large bell pepper (mine was multi colored)
- 1/3 cup coconut aminos
- 2 Tablespoons ground chia seeds
- 1 teaspoon real salt
- 1 teaspoon ground mustard
- 1/2 teaspoon red pepper
Directions:
Chop celery and pepper. Place in blender and blend into a purée with coconut aminos.
Add ground meat, purée, and spices to mixer. Mix well.
Form into patties and fry in coconut oil.
Tip: I used a burger and slider press from PC, and lined it with saran. They came out nice and clean!
Serving suggestions:
Serve with eggs and sautéed squash. Or with a bowl of my Cacao Dream of Wheat and a few berries.
Here’s a picture of my finished patties. There are 5 to a snack size ziploc, and ready for the freezer!
I got 19 patties.
