Smart Refried Beans

I love using a carb, but adding other ingredients to make it feel like I’m getting more! That is why this recipe is so smart!

This is a single serve, and by itself would be a pulled back E, if following THM.

Smart Refried Beans

  • 1/2 cup cooked black beans
  • 1 cup cooked cauliflower (roughly chop cooked cauliflower before measuring)
  • 1/4 medium raw jalapeño
  • 1 clove raw garlic
  • 1/4 cup water
  • 2 Tablespoons collagen
  • 2 raw mushrooms
  • 1 teaspoon olive oil (optional, see note)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt

Instructions:

Combine all in blender and blend till creamy!

Note: I have used 1 teaspoon Olive oil in this. This is the full fat allowance in an E, if following THM. Depending on what you will pair these with, you may wish to omit the oil.

Serving suggestion:

Serve in 2-3 of my low carb wraps with fresh tomato/onion/cilantro salsa, shredded lettuce and top with Greek Yogurt.
