Lentil Curry

A new favorite, my whole family loves this lentil curry, including my husband who doesn’t really care for lentils, generally!! 

This is my quick go-to crock pot meal when I want something with little preparation time, ready for a hot meal in 6-8 hours! 

As it is written, this would be a crossover, if following Trim Healthy Mama. Lessening the fat would be the way to turn this into an E.

Lentil Curry

5 cups dry lentils

2 quarts chicken broth

4 cans full fat coconut milk

2 – 6 oz cans tomato paste OR 2 – 14.5 oz cans diced tomatoes in juice, pulsed in blender, or 1 of each

5 garlic cloves, thinly sliced

2 Tablespoons granulated onion 

1 Tablespoon real salt

1 Tablespoon ground cumin 

1/2 – 1 Tablespoon ground ginger 

1/2 Tablespoon chipotle or crushed red pepper

1 stick (1/2 cup) butter

Combine everything in the crockpot and cook for 6-8 hours or until done! 

That’s it! Now you’re ready to get ready for church or head out to go grocery shopping! Make sure it has that 6-8 hour window for cooking time.

    Just made this – fabulous! Cut the recipe in half as it is only my hubby and myself. Used low-fat coconut milk and did not add the butter. I’m THM but hubby put a big dollop of sour cream on his. This will become a regular in my rotation. Thank you!
