
My daughter and I are very excited about these waffles! They are, for low carb, pretty good. (We think!) And they are relatively easy to make. So, she or I can whip these up pretty easily for a quick breakfast. We feel they are satisfying with butter and a keto maple syrup. A matcha tea with cream pairs well for breakfast!
You will see that many of the ingredients are optional! They add flavor, and are nice to include if you have them, or do not have an allergy. But, the waffles will make up just fine without those added ingredients.

Low Carb Waffles
Wet ingredients:
- 5 eggs
- 1/2 cup water
- 2 Tbs sour cream, optional
- 2 Tbs melted butter, optional
- 2 tsp vanilla extract, optional
Dry Ingredients:
- 1/2 cup oat fiber
- 3 Tbs lupin or garbanzo flour
- 1 Tbs psyllium powder
- 2 tsp baking powder
- 1 teaspoon granulated allulose, optional
- 1/2 tsp real salt
- 1/16 tsp monk fruit extract (or sub stevia extract)
Directions:
Preheat waffle iron.
Combine dry ingredients and whisk till well combined.
Put the butter on to melt, then whisk the rest of the wet ingredients together. Add butter and whisk again.
Add wet ingredients to dry ingredients and whisk together well.
Grease waffle iron. I do this with a paper towel I have dipped in oil. You may prefer to use a spray.
I cook about 1/2 cup of the batter at a time to make a 7” round waffle. Recipe makes almost 5 waffles.. last waffle is smaller!
