Candied Maple Pecans

These were a huge hit at Thanksgiving. I had to make a second batch! Thankfully, they whip up pretty easily, although they take a bit of drying time!

Candied Pecans

  • 1/2 cup water
  • 1 cup collagen
  • 3 cups powdered erythritol
  • 1 Tablespoon black strap molasses
  • 1/3 cup maple extract
  • 1 Tablespoon salt
  • 1/3 cup cinnamon
  • 1 Tablespoon stevia extract
  • 1 Tablespoon monk fruit extract
  • 1/3 cup melted coconut oil
  • 4 pounds pecan halves

Directions:

Combine ingredients 1 at a time from top of list, stirring after each addition.

Spread pecans on two cookie sheets and Bake at 200 degrees for about 4 to 5 hours. Turn/stir a couple times while baking.

Turn out on parchment paper. Separate pecans that are stuck together. Let cool completely. Should be totally dry, at that point.


Variation:

Omit water. Start with maple flavor. Add other ingredients in order, stirring after each one.

Follow the rest of above directions, but increase heat to 275 degrees, and only bake for about two hours or until caramelized.

The first variation is very good. The second is more candy like. My sons preferred version 1. My sister preferred version 2!
