It’s summer! Cucumbers and tomatoes are so light and refreshing, it seems no matter how you prepare them! Here is a simple salad, that I love to use like a fresh salsa on top of my chickpea curry, just to eat, as a side or a topping on other dishes.
Following Trim Healthy Mama, this is a FP. But, be aware of the fat content if you combine it in an E or a FP setting with another dish also containing some fat.
Cucumber Tomato Salad Salsa
Ingredients:
- 3 medium/large cucumbers, peeled and chopped
- 1 onion diced
- 6 cups chopped Roma tomatoes
- 1 bunch cilantro minced
- 1 Tablespoon olive oil
- 2 teaspoons real salt
Instructions:
Wash and chop, dice or mince vegetables. Mix all ingredients together in bowl.
Serve as topping on salads, bean dishes, burritos or curry.
