Pies used to be my thing. And now, pie crust has been a real heartache, while trying to make one low carb. So many that I have tried just didn’t cut it. My family has eaten.. or left.. many of my low carb pie crust flops. This is the only low carb crust that my family has liked, so far. They even said it was GOOD! 😉

Crushed Vanilla Wafer Pie Crust (for 9×13)
- 2 batches vanilla wafers https://LotsaLittleLambs.com/vanilla-wafers
- 1/2 cup melted butter
Instructions:
Crush vanilla wafers. You may wish to pulse them in a vitamix or other high end blender. Should make about 4 cups of crumbs. Melt butter. Combine butter with crumbs. Press into 9×13 casserole dish, covering the sides and bottom. Set in fridge to set. Fill with favorite pie filling, low carb no bake cheesecake, or etc.
