Chicken Apple Salad

This is a really quick, easy salad to whip up and take along if you need to leave quickly and bring food! I only used 1 apple in this, because I am trying to stay within the limits of an E meal while following THM (Trim Healthy Mama). And I could, at the time I first made this, eat the whole jar. Well, the contents of the jar, that is. I am sometimes one hungry mama… πŸ™‚ But if you plan to feed 2 or more with this, you could use 2 apples, if you prefer. πŸ™‚

Chicken Apple Salad
1-12.5 ounce can chicken breast (drain, save broth if you like for use in another dish).
1 cup 0% or non-fat Greek yogurt
1/2 to 1 cup chopped celery (with the leaves, if you like them!)
A few Tablespoons of diced onion
1 diced apple
1-2 Tablespoons goji berries
Salt and pepper, to taste

Measure, chop or dice ingredients as called for. Mix all together! This fits nicely into a quart canning jar. I like to use a wide mouth one for this, as it doubles nicely for my bowl, later! πŸ™‚

Serving ideas: Besides just eating this straight from the jar.. πŸ™‚ This would be good in a wonder wrap (recipe from THM cookbook) or any low carb wrap. Or you can eat this over a bed of lettuce.

    I’m wondering if based on your introduction, this is intended to be 2 meals or 1? I want to make enough of this to make enough lunches for 1 week and just want to be sure I don’t overeat! I’m very new to THM and delving right in!

      Hi! The chicken apple salad makes almost a whole quart! It is within the E guidelines… so you COULD eat the whole thing. And I did when I was pregnant and nursing. But, most people unless they eat a lot, would probably only need 1/2… so two servings from the recipe. ?

    Where do you buy your Goji berries? I looked on Amazon and they looked a bit pricey. Are you able to get them at your local grocery store? What section?

      I have gotten them from my local co op/ health food store. They were both in bulk jars and in small packages. Hopefully I can add them to my store, soon, too!

    Do you use the whole apple? Which kind of apple?

      Yes. I use the whole apple! I leave the peelings on, because I like them, but you can peel if you like. I like a tart Granny Smith apple, but you can use whatever kind you like. ?

      Could you use a dairy free coconut or almond milk yogurt?

    I don’t have Goji berries. Can I substitute something else or just leave them out?

      You could do either. πŸ™‚ Perhaps sub with a few dried, unsweetened cranberries if you have then, or even a few halved grapes.
